MANZANILLO - Spanish origin
Considered one of Spain's finest varieties, it is also the most widely planted variety in Australia and the world as a result of its high quality fruit and high productivity. Its fruit are apple-shaped with an excellent flesh-to-pit ratio of (8:2:1) and highly sought after by the processing industry due to its 'free-stone' seed with is very easy to remove from the outer flesh.

The tree can grow up to ten meters tall however with its annual light prune can be kept to a low set architectural form. Regular cultural care will ensure the Manzanillo bears fruit annually occurring early in the season.

FRANTOIO - Italian origin
Frantoio is the most noted olive oil variety of Tuscany, Italy, and one of the most acclaimed oil varieties in the world. The olives are small to medium size (2 to 3g) and oval in shape with a pleasant nutty flavour when pickled.

The tree can grow up to six meters tall but known for its slow growth rate. Its leaves are a glossy dark green colour with inconspicuous white flowers when in bloom.

Azapa - Chilean origin
Due to its hardiness this tree thrives in warmer climates reflecting its extensive use in Chile. The tree is internationally considered to produce great table olives with sizes varying from medium to large (averaging 8 grams) yielding anywhere from 60-300 olives per kilogram. The fruit is elongated in shape with a pronounced point allowing it to be easily distinguishable from other varieties.
